Pork dumplings, or jiaozi, are a beloved dish in China, traditionally served during the Lunar New Year to symbolize wealth and prosperity. Families often gather to make these dumplings together, sharing stories and laughter as they fold the wrappers. Today, pork dumplings are enjoyed worldwide, with countless regional variations and fillings, reflecting the dish's adaptability and universal appeal.

Quarter the napa cabbage and thinly slice the root, then roughly chop the cabbage into small pieces.
Place the chopped cabbage in a bowl and add 1 teaspoon to 1.5 teaspoons of salt, mixing it to draw out moisture. Set aside for 10 to 20 minutes.
After 15 minutes, squeeze out the excess water from the cabbage into another bowl and taste for saltiness. Rinse if too salty.
In a mixing bowl, combine 1 pound of ground pork, 1 tablespoon of grated garlic, 1 tablespoon of grated ginger (half added initially), 1 tablespoon of sesame oil, 1 tablespoon of soy sauce, 1 tablespoon of thinly sliced green onion, and 1 teaspoon of white pepper. Crack in 1 egg.
Mix all the ingredients together until it forms a paste, using your hands for thorough mixing.
Take a small amount of the mixture and microwave it to taste for seasoning.
Once satisfied with the flavor, prepare to make dumplings using wonton wrappers instead of dumpling wrappers.
Moisten the edges of a wonton wrapper with water, place a teaspoon of filling in the center, and fold the corners up, pinching to seal.
Pinch the edges together, creating a standing dumpling shape, and repeat until all filling is used.
Heat a pan over medium heat and add about 1 tablespoon of avocado oil.
Add the dumplings to the pan and let them sit for 3 to 5 minutes until the bottoms are golden brown.
Prepare a dipping sauce by mixing 1 tablespoon of light soy sauce, 1 teaspoon of sesame oil, and 1 teaspoon of chili garlic sauce.
Check the dumplings for color, then add hot water to the pan and cover for another 3 to 5 minutes until the water is gone.
Remove the dumplings from the pan and plate them, serving with the dipping sauce.
