In a bowl, combine 50 mL of milk, 10 g of sugar, 4 g of instant dry yeast, and 100 g of bread flour. Mix until smooth and let rest in the fridge for at least 3 hours or overnight.

Take the starter and place it into a mixing bowl. Add 150 mL of water and mix thoroughly.

Separate the egg yolks from 5 eggs, totaling around 100 g. Mix the yolks until smooth.

Add 300 g of bread flour to the mixing bowl with the starter liquid and knead on low speed to combine.

Add half the sugar and half the egg yolks to the dough. Knead for 2-3 minutes, then add the remaining sugar and egg yolks. Knead for another 4-5 minutes.

Gradually add softened butter to the dough while mixing on low to medium speed. Scrape down the sides of the bowl as needed.

If the kitchen humidity is high, add 2 ice cubes to the dough to keep it cool during kneading. Skip this step if humidity is low.

Add salt to the dough and knead for a few more minutes until fully smooth and elastic. Perform the window pane test to check readiness.

Remove the dough from the bowl, place it in a clean container, cover it, and let it rest in the fridge for 1 hour.

In a small bowl, combine the zest of one orange, 1 tbsp of vanilla essence, and 2 tbsp of honey. Mix well and set aside.

Prepare a bread mold or use a store-bought one. Use any dried fruits you have on hand.

After 1 hour, take the dough out of the fridge and knead on low speed for about 2 minutes, gradually adding the flavor liquid.

Add one more egg yolk and knead for another minute. Mix in the dried fruits for about 2 minutes on low speed.

Transfer the dough into the bread mold, cover with cling film or a clean cloth, and leave to proof for 3-4 hours at room temperature.

Preheat the oven to 170°C (340°F). Cut the top of the dough with a sharp knife and place a piece of butter in the center.

Bake the bread for 55-60 minutes, checking that the internal temperature reaches 90-92°C (194-198°F).

Once baked, flip the bread upside down and hang it using skewers or sturdy support. Let it cool for 5-6 hours.
