Melawach Burekas has its roots in the Jewish communities of Yemen, where melawach is a flaky, layered bread. Traditionally served during Shabbat, these pastries have become a beloved street food in Israel, often filled with various savory ingredients. Today, melawach burekas are enjoyed globally, with many variations reflecting local tastes and ingredients.
Combine flour and salt in a bowl. Gradually add water until a dough forms.
Knead the dough on a floured surface until smooth, about 5-7 minutes.
Cover the dough with a damp cloth and let it rest for 30 minutes.
Peel and boil potatoes until tender, then mash and let cool.
In a skillet, heat olive oil over medium heat. Sauté spinach until wilted, about 2-3 minutes.
Mix mashed potatoes, sautéed spinach, feta cheese, cumin, coriander, and black pepper in a bowl.
Divide the rested dough into equal portions. Roll each portion into a thin circle.
Spread butter on each circle, then fold into quarters to create layers.
Roll each folded circle into a flat disk again.
Heat a skillet over medium heat. Cook each disk until golden brown on both sides, about 3-4 minutes per side.
Fill each disk with the potato and spinach mixture, folding into a triangle shape.
Brush the tops with beaten egg and sprinkle with sesame seeds.
Return to the skillet and cook until the filling is heated through, about 5 minutes.
Garnish with chopped parsley before serving.
