Pour in 120ml (½ cup) vegetable oil and whisk for 1 minute.

Add 75g (⅓ cup) plain yogurt and whisk for 30 seconds.

Mix in 225g (1 ½ cups) plain flour, 1 teaspoon baking powder, ½ teaspoon baking soda, and 1 teaspoon cinnamon powder. Mix well!

Add 1 teaspoon vanilla extract and ½ teaspoon almond essence (optional).

Fold in 225g (2 cups) grated carrots and 75g (½ cup) chopped walnuts. Mix well!

Pour the batter into a 20x20 cm baking pan.
