Wash fresh tomatoes and blend them until smooth.
Set the blended tomatoes aside.
Peel some garlic and set it aside.
Remove the stems from 4 habanero peppers and add them to the blender whole.
Add the peeled garlic to the blender with the habanero peppers.
Add onion powder, allspice, clove, ground mustard, turmeric, salt, and honey to the blender.
Blend all the ingredients until smooth.
Transfer the blended mixture to a pot.
Add cider vinegar to the pot and place it on the stove.
Bring the mixture to a simmer for about 10-15 minutes to kill bacteria and thicken it up.
To thicken further, prepare a cornstarch slurry by dissolving cornstarch in water and add it to the pot.
Let the mixture boil for another minute to thicken it more.
Take sanitized bottling equipment out of the dishwasher or oven (at 220 degrees for 15 minutes).
Transfer the ketchup to a smaller pot for easier bottling.
Taste the ketchup and adjust seasoning if necessary.
