4 oz cream cheese
2 tablespoons butter
1 teaspoon vanilla
1 teaspoon lemon juice
1/8 teaspoon salt

In a large mixing bowl, add 1/2 cup of butter.

Add 3/4 cup of cane sugar and mix until fluffy.

Add 2 teaspoons of vanilla extract and 2 teaspoons of apple cider vinegar, then mix.

Crack in 1 egg and mix until combined.

Add 2 cups of almond flour, 1/2 cup of tapioca flour, 3 tablespoons of beetroot powder, 2 tablespoons of cocoa powder, 1 teaspoon of baking powder, and 1/2 teaspoon of salt. Mix until you have a soft cookie dough with an even red color.

Line a baking sheet with parchment paper.

Using a medium-sized cookie scoop, place cookie dough on the parchment paper, leaving a couple of inches between each cookie.
