Start with Yula or Jewish cookies. Mix 250 g all-purpose flour with 0.5 tsp baking powder and a pinch of salt.
Crumble in 150 g cold cubed butter until it resembles sand.
Add sugar and 1 egg to bring the dough together, then wrap and chill.
Roll out dough to desired thickness for crispy cookies.
Apply an egg wash and sprinkle with cinnamon sugar and almonds before baking.
Bake at 200°C (400°F) for about 5 minutes.
Move on to puanilla cookies. Mix 350 g all-purpose flour with spices (1 tsp cinnamon, 1 tsp white pepper, 0.5 tsp ground ginger, 0.5 tsp cloves), 1 tsp baking powder, and a pinch of salt.
Crumble in 113 g cold cubed unsalted butter until sandy.
Add 150 g brown sugar and 100 ml cold milk or water, mix and chill.
Roll dough into logs, cut into pieces, and shape into balls on a baking sheet.
Bake for 10-15 minutes until golden.
Next, make vanilia k (vanilla wreaths). Mix 150 g softened butter with 150 g granulated sugar.
Add 1 egg and 1.5 tsp vanilla, then mix.
Incorporate 50 g almond flour and 200 g all-purpose flour, adding a pinch of salt if using unsalted butter.
Adjust consistency with a splash of milk to make it pipable.
Pipe cookies onto a baking sheet and freeze if desired for shape retention.
Bake until golden and crispy.
Finally, prepare Bona cookies. Melt 100 g butter with 100 g dark brown sugar and black treacle, then cool.
Mix the dough in a larger bowl after cooling.
