Preheat the oven to 400°F (200°C).
Pat the pork tenderloin dry with paper towels.

Add chopped carrots and potatoes to the skillet and stir to combine.
Mix together mustard, honey, soy sauce, rosemary, thyme, and lemon juice in a bowl.
Return the pork to the skillet and brush the mustard mixture over the top.
Pour chicken broth around the pork in the skillet.
Transfer the skillet to the preheated oven and roast for 20-25 minutes, until the internal temperature reaches 145°F (63°C).
Remove from the oven and let the pork rest for 5-10 minutes before slicing.
Serve the pork with the roasted vegetables and drizzled with pan juices.
