Sweet Potato Latkes

2 cups grated sweet potato
1/2 cup grated onion
1/4 cup all-purpose flour
1 large egg
1 tsp salt
1/2 tsp black pepper
1/4 tsp garlic powder
1/4 tsp paprika
1/4 cup vegetable oil (for frying)
1 cup grated celery root

Peel and grate the sweet potato and celery root using a box grater or food processor.

In a large bowl, combine the grated sweet potato and celery root.

Add the flour, egg, salt, black pepper, garlic powder, and paprika to the bowl. Mix until well combined.

Heat the vegetable oil in a large skillet over medium heat.

Scoop about 1/4 cup of the sweet potato and celery root mixture and form it into a patty.

Carefully place the patty in the hot oil. Repeat with remaining mixture, making sure not to overcrowd the pan.

Fry the latkes for about 4-5 minutes on each side, or until golden brown and crispy.

Remove the latkes from the skillet and place them on a paper towel-lined plate to drain excess oil.
