Sweet Potato Latkes

1 teaspoon Himalayan pink salt
1/2 teaspoon freshly ground black pepper
2 large eggs
1 teaspoon kalonji/nigella seeds
1 large garlic clove
1/2 teaspoon cayenne pepper
2-3 tablespoons rice flour or all purpose flour
1/4 cup schmaltz or avocado oil
2 tablespoons feta cheese for serving

Peel and grate the sweet potatoes.

In a bowl, combine grated sweet potatoes, salt, pepper, eggs, kalonji seeds, minced garlic, cayenne pepper, and flour.

Mix until well combined.

Heat schmaltz or avocado oil in a skillet over medium heat.

Scoop the mixture into the skillet, flattening it to form latkes.

Cook until crispy and golden brown on both sides.

Serve with feta cheese.
