Sweet Potato Latkes

2 medium sweet potatoes (1 orange, 1 yellow)
1/2 yellow onion
handful of parsley
1 clove garlic
2 eggs
salt
fresh ground black pepper
4-5 tablespoons all-purpose flour

Peel the sweet potatoes.

Shred the sweet potatoes using a heavy grater.

Squeeze out excess water from the shredded potatoes using a kitchen towel or paper towel if too wet.

Finely dice half a yellow onion and add it to the sweet potatoes.

Chop a handful of parsley and add it to the mixture.

Grate 1 clove of garlic and add it to the mixture.

Mix everything well, then make a well in the center of the bowl.

Add 2 eggs to the well and season with salt and fresh ground black pepper.

Beat the eggs well and incorporate with the rest of the ingredients.

Add 4-5 tablespoons of all-purpose flour, just enough to bind the mixture without making it too thick.

Heat a large skillet and add a good amount of vegetable oil.

Add tablespoons full of the mixture onto the skillet and lightly press and flatten the latkes with a spatula.

Flip the latkes and fry each side until golden brown.

Remove the latkes and place them on paper towels to drain.
