- 3In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- 4Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- 5Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chocolate chips.
- 6Divide the dough in half and spread each half onto a baking sheet lined with parchment paper, forming two large rectangles.
- 7Bake in the preheated oven for 15-20 minutes, or until the edges are set and the center is slightly soft. Let cool completely on the baking sheet.
- 8Once cooled, carefully remove the cookie layers from the parchment paper.

- 2In a large bowl, mix together 2 1/2 cups flour, 1 tsp salt, and 1 tsp sugar.

- 4Stir in the ice water, a tablespoon at a time, until the mixture forms a ball. Wrap in plastic and refrigerate for at least 4 hours or overnight.

- 6In a separate bowl, mix 3/4 cup sugar, 2 tbsp flour, cinnamon, nutmeg, and lemon juice. Pour over the apples and toss to coat.
- 7Dot the filling with 1 tbsp butter. Roll out the remaining dough and place over the filling. Seal and flute the edges.
- 8Cut slits in the top crust to allow steam to escape. Brush with a mixture of egg yolk and milk.
- 9Bake in the preheated oven for 15 minutes. Reduce the temperature to 350°F (175°C) and continue baking for 35 to 45 minutes, until apples are soft and crust is golden brown.
