Cut 3 large plantains into medium-sized slices and soak them in salt water to prevent discoloration.

In a small bowl, mix together 1 tsp turmeric powder, 2 tbsp chili powder, 1 tsp black pepper powder, 2 tbsp cumin powder, 2 tbsp coriander powder, 1 tsp garam masala powder, 1 tsp salt, and a pinch of Hing.

Add 1 tbsp rice flour, 1.5 tbsp gram flour, and 2 tbsp semolina to the spice mix and combine well.

Transfer the spice mix to a plate and coat the plantain slices on both sides with the spice mixture.

Heat a flat pan (tawa) and add a little vegetable oil, spreading it across the surface.

Place the coated plantain slices onto the tawa and fry in batches on medium heat, adding a few teaspoons of oil on top.
