Add warm water to a bowl and ensure it's about 121 degrees.
Add sugar to the warm water and stir to combine.
Sprinkle in rapid rise instant yeast and stir gently to mix. Let it sit until puffy, indicating the yeast is activated.
In a separate bowl, combine vegetable oil and brown sugar, stirring until dissolved.
Add salt to the mixture and stir to combine.
Gradually add all-purpose flour to the mixture and stir until a dough forms.
Flour a cutting board and transfer the dough onto it, kneading for about 5 minutes until soft and elastic.
Grease a large bowl with oil and place the dough inside, flipping it to coat with oil. Cover with plastic wrap and let rise in a warm place for about 1 hour.
Once risen, punch down the dough to release air and divide it into two sections.
Roll each section into about 25 small balls, totaling approximately 15 pretzel bites.
Prepare a baking soda bath by dissolving baking soda in warm water.
Dunk each pretzel ball into the baking soda water, letting excess drip off.
Preheat the oven to 400 degrees and place the pretzel bites on a baking sheet.
Bake for 8 minutes until golden brown.
While baking, prepare cinnamon sugar by combining cinnamon and sugar in a bowl.
Melt butter and mix in vanilla extract.
Once pretzel bites are done, dunk them in melted butter, letting excess drip off, then coat in cinnamon sugar.
