Cut the turkey wings into joints and wash them.
Pour the turkey wings into a pot.
Add sliced onion, ginger, garlic, and spring onion to the pot.
Add basil leaves, thyme, curry powder, cayenne pepper, salt, and seasoning powder, then stir.
Leave the mixture to cook in its own juices for a couple of minutes.
Add enough water to the pot to cook the turkey until soft and tender, then cover and cook for another eight minutes.
Remove the turkey and save the juices.
In the same pot, add canola oil and fry the turkey until golden brown and crispy, adding spring onion for flavor.
Repeat the frying process for the remaining turkey wings.
Reduce the oil in the pot and add a pepper mixture made of giant bell pepper, scotch bonnet, medium sized onion, and garlic, along with spices (curry, thyme, salt, seasoning powder).
Add the fried turkey to the pot and stir to coat with the sauce.
Garnish with bell peppers and sprinkle onion, then steam for one minute.
