Boil 6 liters of water in the largest pot available.

Add 500 grams of washed and drained hominy corn (Mote) to the boiling water.

Once the water starts boiling again, reduce heat and let it simmer for 3 hours.

After 2.5 hours, add half of the chopped onion to help the hominy pop faster.

After 3 hours, add the entire beef leg (pata), tripe (mondongo), and any other beef parts to the pot.

Cover and let it cook for another 2 hours on low heat.

After 1 hour and 40 minutes, add salt to taste and 2 sprigs of mint to the pot.

Let it cook for the remaining 20 minutes.

Remove the beef and tripe from the pot, chop them into small pieces, and return them to the pot.

Let it simmer for another 10 minutes before turning off the heat.

Chop the mint and parsley finely to add when serving.

Serve the dish with the chopped herbs added on top.
