Cottage cheese cheesecake is a variation of traditional cheesecake, often considered a lighter option due to the use of cottage cheese instead of cream cheese.

Ingredients

  • 2 cups cottage cheese
  • 1 cup granulated sugar
  • 1/2 cup sour cream
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup all-purpose flour
  • 1/4 tsp salt
  • 1/2 cup melted butter
  • 1/2 cup crushed graham crackers (for crust)
  • 1/4 cup sugar (for crust)

Instructions

  1. 1Preheat the oven to 325°F (160°C).
  2. 2In a blender or food processor, blend the cottage cheese until smooth.
  3. 3In a large mixing bowl, combine the blended cottage cheese, granulated sugar, sour cream, eggs, vanilla extract, flour, and salt. Mix until well combined.
  4. 4In a separate bowl, mix the crushed graham crackers with the melted butter and 1/4 cup sugar until the mixture resembles wet sand.
  5. 5Press the graham cracker mixture into the bottom of a 9-inch springform pan to form the crust.
  6. 6Pour the cottage cheese mixture over the crust in the springform pan.
  7. 7Bake in the preheated oven for 50-60 minutes, or until the center is set and the edges are lightly golden.
  8. 8Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.
  9. 9Remove the cheesecake from the oven and let it cool to room temperature before refrigerating for at least 4 hours or overnight.
  10. 10Once chilled, remove the sides of the springform pan and serve.
