How to Make Chorizo & Red Pepper Gnocchi

Preheat the oven to 425 degrees.

Chop the cherry tomatoes.

Chop the red pepper.

Chop the red onion.

Drizzle the chopped vegetables with olive oil, salt, pepper, oregano, and red pepper chili flake, and toss to mix.

Spread the vegetable mixture on a baking sheet and roast in the oven for about 15 minutes.

Remove the roasted vegetables from the oven and add the gnocchi.

Chop the chorizo and add it to the mixture (or break it apart if not chopped).

Mix everything together in the baking dish.

Top the mixture with mozzarella cheese.

Return the dish to the oven and bake for about 20 minutes until the cheese is melted and bubbly.
