Pandebono

heaping 2/3 cup of tapioca starch - 100g
heaping 1/4 cup of cooked cornmeal - 50g
1/4 tsp baking powder
two large eggs - separated
10 ounces of queso fresco cheese
10 ounces of feta cheese

Preheat oven to 400F

Finely grate both cheeses together

Combine all ingredients (Leave One Egg)

Grease baking pan with neutral oil

Have a side bowl of Water (For hands)

Roll mixture into balls (About the size of medium meatballs)

Brush the rolls with egg wash

Sprinkle each roll with Flakey Salt

Bake for about 18 minutes until Golden
