Smoke the turkey breast at 275°F until it reaches an internal temperature of 170°F, then wrap it in butcher paper and add a pad of butter while it rests.
Prepare the homemade coleslaw by chopping red cabbage, red onion, jalapeno, and green onion into small juliennes.
In a bowl, mix the chopped vegetables with a pinch of salt, a pinch of pepper, 3 tablespoons of sugar, 6 tablespoons of mayonnaise, and 6 tablespoons of apple cider vinegar.

Butter one side of each slice of sourdough bread.
