Traditional Newfoundland Fish Cakes

Originating from the coastal communities of Newfoundland and Labrador, fish cakes are a traditional dish that reflects the region's fishing heritage. These cakes were often made from leftover fish and potatoes, showcasing resourcefulness in a rugged environment. Today, they are a beloved comfort food, often served during holidays and family gatherings, and have inspired various adaptations across Canada and beyond.

Fresh fish can be lower in sodium and canned fish is often more affordable.

Olive oil is healthier and margarine can be more budget-friendly.
Cut salted cod into pieces and soak in cold water overnight, changing the water a couple of times depending on taste.
The next morning, drain the water and boil the soaked cod for about 5 minutes, then drain again and pick through for bones.
Boil about 8 cups of potatoes until tender, then mash them lightly and add a few tablespoons of butter without adding salt.
Combine the boiled cod with the mashed potatoes, mixing lightly to combine.
Add a couple of tablespoons of mountain savory and optionally some dill to the mixture, adjusting to taste.
Form the mixture into balls and roll them in flour to coat.
Heat a pan over medium-high heat and add a pinch of butter and some oil.
Press the fish cake balls down into patties and place them in the pan to fry.
Cook the fish cakes until golden brown on each side, flipping carefully to avoid burning.
If desired, freeze uncooked fish cakes with wax paper in between to prevent sticking.
