Instructions
- 1Combine flour, semolina, and salt in a large bowl.
- 2Dissolve yeast in warm water and add to the flour mixture.
- 3Knead until smooth, about 10 minutes.
- 4Cover the dough and let it rest for 30 minutes.
- 5Divide dough into equal balls and flatten each one.
- 6Brush with oil and fold into a square.
- 7Layer the squares on top of each other, brushing with oil in between.
- 8Roll out each layered square into a thin pancake.
- 9Heat a skillet over medium heat and add oil.
- 10Cook each pancake until golden brown, about 2-3 minutes per side.
- 11Serve warm with honey or jam.

- 7Brush the surface of each circle with olive oil and sprinkle with ground cumin if using.
- 8Fold the circle into quarters, then fold again to form a triangle or a square shape.
- 9Heat a skillet over medium heat and cook each rghaif for about 2-3 minutes on each side until golden brown and crispy.
- 10Brush with melted butter while cooking for extra flavor.
- 11Serve warm as a snack or side dish.
