Christmas Ham

2 to 2.5 kg unsmoked gammon
1 liter apple juice
couple of white onions
black peppercorns
whole cloves
star anise
couple of bay leaves
honey

brown sugar

Cut a couple of white onions in half and place them at the bottom of the slow cooker.

Lay the unsmoked gammon on top of the onions.

Pour in 1 liter of apple juice.

Add black peppercorns, whole cloves, star anise, and a couple of bay leaves to the slow cooker.

Stir everything well and pop the lid on.

Cook on low for 6 to 8 hours or on high for 4 to 5 hours if in a rush.

Once cooked, take the ham out of the slow cooker and place it on a plate to allow the liquid to drain away.

Transfer the ham into a lined tray (lined with tin foil about three times).

Using a sharp knife, remove the skin from the layer of fat on the ham and score the ham a few times.

Insert whole cloves into the scored areas of the ham.

Make the glaze by mixing honey, Dijon mustard, brown sugar, and all spice in a bowl.

Spread the glaze all over the top of the ham, particularly down the fatty side.

Place the ham in a hot oven for 20 to 25 minutes until the glaze cooks through and becomes brown and sticky.

Let the ham rest for 10 to 15 minutes before carving.
