Christmas Ham

Cultural Context

Originating from Italy, Christmas Ham is a festive centerpiece often enjoyed during holiday celebrations. Traditionally, it symbolizes abundance and is served with various accompaniments. Today, variations can be found worldwide, with different glazes and spices reflecting local tastes.

ITITmain
8 servings
Servings4
2 kilograms (4.5 pounds) Virginia bone-in ham
1 large bottle of Coca-Cola
cinnamon sticks
cloves
star anise
1-2 oranges
2-3 tablespoons butter
3 tablespoons brown sugar
1-2 tablespoons orange marmalade
1

Cut open the plastic bag and net around the ham using kitchen shears.

2

Place the ham in a large pot.

3

Pour an entire large bottle of Coca-Cola into the pot, ensuring the ham is mostly submerged.

4

Add cinnamon sticks, cloves, and star anise to the pot.

5

Roll 1-2 oranges under your palm, cut them in half, and squeeze the juice into the pot, catching any seeds with one hand.

6

Ensure at least three-quarters of the ham is covered in the Coca-Cola bath; add more Coca-Cola or water if necessary.

7

Place the pot on the stove over medium heat and bring the Coca-Cola bath to a simmer, ensuring it does not boil.

8

Skim any foam that collects on the surface with a ladle for a cleaner taste.

9

Cover the pot with a lid, leaving a small hole for steam to escape, and simmer for 2 to 2.5 hours.

10

After 2 to 2.5 hours, turn off the heat and remove the pot from the stove.

11

Allow the ham to cool down and discard the Coca-Cola mixture.

12

In a small pot, melt 2-3 tablespoons of butter over medium-low heat until browned, being careful not to burn it.

13

Add 3 tablespoons of brown sugar, 1-2 tablespoons of orange marmalade, and the juice of 1-2 oranges to the browned butter and stir until fully incorporated.

14

Once the ham is cool enough to handle, remove the excess rind and fat with a sharp knife.

15

Make crisscross cuts on the surface of the ham with a sharp knife, creating a pattern.

16

Insert cloves into each intersection of the crisscross cuts for decoration and flavor.

17

Place the ham in a baking tray and use a pastry brush to glaze it with the butter sauce.

18

Preheat the oven to 210 degrees Celsius (410 degrees Fahrenheit).

19

Bake the ham in the preheated oven for 10-15 minutes until it develops a deep ruby red color.

20

Remove the ham from the oven and glaze it again before returning it to the oven for another 10-15 minutes.

21

Once done, take the ham out of the oven and let it rest before slicing.

22

Use a carving fork and knife to slice the ham and serve it with the remaining brown butter sauce.
