Soak almonds in water until they double in size.
Drain the almonds, ensuring they are moist but not wet.
Mix the soaked almonds with sweet paprika, sea salt, smoked paprika, himalayan salt, ginger, and garlic powder.
Place the almonds in a pan and cover it, leaving it slightly open.
Roast the almonds slowly for almost two hours, tossing them every half hour.
After roasting, sprinkle the almonds with a little water and the prepared spices.
Let the almonds cool down for about five to seven hours.
For caramelized almonds, take some of the roasted almonds and roast them on medium fire for half an hour.
Increase the heat to maximum and add 15 milliliters of water and 20 grams of brown sugar.
Stir quickly and do not move the almonds for about five minutes to allow caramelization.
Place the caramelized almonds on a plate and let them cool.
