Vegan Chocolate Babka

2/3 cup Cocoa Powder
1 tsp Cinnamon
2 tsp Vanilla Extract
1 tsp Salt
2/3 cup Dark Chocolate, Chopped

In a small bowl, combine yeast, sugar and warm almond milk. Set aside until mixture becomes frothy.

In a large bowl add flour, baking powder, salt and sugar. Whisk to combine, then add the yeast mixture. Start stirring the mixture together with a wooden spoon.

Once a dough starts to form, transfer the mixture to a floured work surface and bring the dough together with your hands. Knead the dough for about 5-10 minutes or until a smooth dough is formed.

Place dough in an oiled bowl, cover and let rest until dough has doubled in size - at least 1-2 hours.

In a medium sized bowl, combine maple syrup, brown sugar, cocoa powder, cinnamon, vanilla and salt. Set aside.

Once the dough has doubled in size, split the dough into two equal parts. On a floured surface, roll out each half of the dough into a rectangle that is approximately 16x25”.

Divide the filling in half and spread the chocolate mixture in an even layer on top of each rectangle leaving a border of about 1 inch around the dough.

Sprinkle the chopped dark chocolate evenly over the chocolate filling.

Along the longest side, roll the dough down into a log. This will create a spiral.

Using a knife, cut each roll lengthwise down the middle. This will show the many layers created by rolling the dough.

Once you have cut both rolls, you will have 4 long pieces of dough. In a greased 10” skillet, lay out each piece of dough (chocolate side up) to form an X.

To braid the dough, start with one piece and fold it onto the piece to the left of it. Continue, moving counter clockwise folding each piece over the piece next to it.

Once you get to the ends, tuck all the pieces so they are inside the skillet.

Bake at 375F for 30 - 35 minutes or until the top is golden brown.

Let rest at least 10 minutes before cutting.
