450 gms chicken breast (cut into 1 inch strips)
3 tsp dark soy sauce
1/2 tsp salt
3 tsp corn flour
2 tsp ginger (fine chopped)
2 tsp garlic (fine chopped)
1 medium onion (thick sliced)
1 large red bell pepper (cut into long strips)
2 tbsp oyster sauce
2 tsp dark soy sauce
1 tsp brown sugar
3 tbsp chicken stock
1 tbsp olive oil
1 tbsp olive oil
pinch salt
pinch pepper
1.5 tsp pepper powder
3 tbsp spring onion greens (for garnish)
1-1.5 tsp white sesame seeds

Cut the chicken breasts into one inch strips and marinate with dark soy sauce, salt, and corn flour.

In a small bowl, mix all the ingredients for the sauce and set aside.

Add 1 tbsp olive oil in a pan and add the marinated chicken strips. Fry on high heat for around 4 minutes until dark in color, then remove and set aside.

In the same pan, add another tbsp of olive oil and then add the chopped ginger and garlic. Stir briefly.

Add the sliced onion and red bell pepper, along with a pinch of salt and pepper powder. Sauté on medium heat for 2-3 minutes.

Return the fried chicken pieces to the pan and sauté on high heat for 1-2 minutes until combined and the chicken pieces are browned.

Add the sauce mix and additional pepper powder, mixing on high to medium-high heat for around 2 minutes until the sauce is absorbed.

Garnish with white sesame seeds and chopped spring onion greens, then stir fry for a minute.
