Add olive oil to a skillet over medium heat.

Add chopped onion to the skillet and sauté until translucent.

Add chopped carrots and chopped celery to the skillet and stir to combine.

Add chopped garlic and mix everything together.

Pour in 2 cups of chickpea and red lentil risoni into the skillet.

Add 4 cups of chicken broth to the skillet and wait for it to boil.

Once boiling, add ghee butter to the mixture.

Cover the skillet and let it cook for about 15 minutes.

After 15 minutes, check the risoni; if not ready, cover and let it cook for an additional 15 minutes.

Once cooked to desired softness (30-35 minutes total), add cheese to the risoni and stir until melted.
