Salt the water and add red wine vinegar.
Place the onions in the salted water for 7 minutes.
Cut the crusts off the leftover bread and soak it in milk.
Squeeze the excess milk from the bread into a bowl.
Crush a little bit of garlic and set aside.
Cube leftover potatoes and chop tomatoes and parsley.
Remove the onions from the water and cut them horizontally, taking out some of the pulp.
Add the squeezed bread, chopped garlic, cubed potatoes, chopped tomatoes, and parsley to a bowl.
Add bacon to the mixture and season with salt and black pepper.
Add 2 eggs and grated parmigiana cheese to the mixture and stir well.
Use the onion pulp to patch any holes in the onion shells.
Stuff each onion with the mixture, packing it tightly.
Drizzle olive oil in the base of a pan.
Sprinkle breadcrumbs on top of the stuffed onions and drizzle with olive oil.
Preheat the wood-fired oven to about 450°F (232°C).
Cover the onions with aluminum foil and place them in the oven.
Check the onions after 10-15 minutes and uncover them.
Once cooked, garnish with parsley and drizzle with olive oil before serving.
