Cut figs into quarters and place in a large pot.
Add sugar to the pot and mix with figs until coated.
Pour water over the fig mixture and bring to a boil over medium heat.
Reduce heat and simmer for 30 minutes, stirring occasionally.
Add lemon juice, vanilla extract, and spices to the pot.
Continue to simmer for another 15-20 minutes until thickened.
Remove from heat and let cool slightly before transferring to sterilized jars.
Seal jars tightly and let cool completely at room temperature.
Store in a cool, dark place for at least 24 hours before using.
