Vegan Stuffed Shells

Preheat the oven to 375ยฐF.

Bring a large pot of water to a boil.

Add the entire box of jumbo shells to the boiling water and cook for 9 minutes, uncovered.

After 9 minutes, drain the shells in a colander and run cold water over them to stop the cooking process.

Let the shells cool for a minute before handling them.

Spread about 2 cups of marinara sauce on the bottom of a 13x9 pan.

Stuff each shell with the ricotta with kale mixture, preferably wearing gloves for cleanliness.

Place the stuffed shells in the pan on top of the marinara sauce, ensuring they are all filled.

Drizzle the remaining marinara sauce (about 6 cups) over the stuffed shells.

Cover the pan with aluminum foil and bake in the preheated oven for 25-30 minutes.

Remove the pan from the oven and let it sit for 15 minutes before serving.
