Heat a little oil in a pan.

Add 2-3 teaspoons of crushed garlic to the pan and sauté.

Add crushed tomatoes and tomato sauce to the pan and mix.

Add sugar and red wine to the sauce and mix well.

To make the pesto, combine basil, pine nuts, lemon juice, garlic, and olive oil in a blender.

Add vegan parmesan cheese made from rice to the blender and blend until smooth.

Crumble tofu into pieces and add it to a bowl.

Add roughly chopped spinach and onion to the bowl with the crumbled tofu.

Add the pesto mixture from earlier to the bowl and mix everything together.

Transfer the filling into a Ziploc bag for piping.

Pipe the filling into the stuffed shells and place them in a baking dish with some sauce on the bottom.

Cover the stuffed shells with more sauce and cover the dish with foil.

Bake for approximately 20 minutes.

Remove the foil and sprinkle vegan cheese on top.

Serve hot.
