4 cups of chicken stock
2 minced garlic cloves

red pepper flakes
cannellini beans (15/5 oz can)
6 small yellow potatoes
parmesan or pecorino tomato cheese

Set cut veggies aside.

Add oil to pot and heat.

Break apart turkey and cook until browned most of the way; remove and set aside.

Add more oil and cook all vegetables except for the potatoes until soft (approx 8 minutes).

Add 2 minced garlic cloves and cook another minute.

Return turkey to pot; add drained cannellini beans, diced tomatoes, and 3 tbs of tomato paste.

Add seasonings: 1 tsp black pepper, 1/2 tsp oregano, and salt to taste (I added 3 pinches of salt) along with a couple pinches of red pepper flakes.

Add potatoes and 4 cups of chicken stock, stir.

Cover and bring to a boil; reduce heat and simmer for about 15 to 20 minutes until everything is soft but not mushy.

Serve hot with a nice chunk of fresh Italian bread and/or salad.
