Add 2 cups of blanched almonds into a food processor and process on low speed for 20-30 seconds until finely chopped.
Transfer the ground almonds into a large bowl.
Measure out 1 cup of powdered sugar and add it to the bowl with the ground almonds; mix until well combined.
Crack 1 large egg, separate the yolk from the whites, and whisk the egg whites for about 15 seconds.
Add the whisked egg whites into the almond-sugar mixture and mix until well combined.
Push down on the mixture with your hands until it forms a compact paste.
Shape the mixture into cookie forms, about a quarter inch thick, and place them on a lined baking tray.
Cut three slits on each cookie for design and to help them rise.
Brush the tops of the cookies with the whisked egg yolk.
Bake in a preheated oven at 200°C (390°F) for about 9-10 minutes until cooked.
Let the cookies cool at room temperature for a couple of minutes before serving.
Sprinkle with powdered sugar before serving.
