This dish reflects the blending of Middle Eastern and Eastern European culinary traditions, showcasing the versatility of phyllo pastry. Today, bourekas have gained popularity beyond Israel, appearing in bakeries and homes worldwide, often customized with different fillings.

Whole wheat pastry adds fiber, while puff pastry is often more affordable.
Heat 1 tablespoon of olive oil in a pan over medium-high heat.
Add 1 tablespoon of minced garlic and 1/2 cup of chopped shallots to the pan.
Add 1 pound of spinach and cook for about 2-3 minutes until wilted.
Turn off the heat and transfer the spinach mixture to a bowl.
Add 1/2 teaspoon of salt and 1/4 teaspoon of black pepper to the spinach and stir.
Let the spinach mixture cool to room temperature.
In a separate bowl, combine 1/2 cup of crumbled feta and 1/2 cup of ricotta cheese.
Add the cooled spinach mixture to the cheese mixture, leaving any water in the pan behind.
Take a package of puff pastry, cut it into fourths, and place a scoop of the filling in the center of each piece.
Brush the edges with 1 beaten egg, fold the pastry over, and seal the edges.
Place the bourekas on a parchment-lined cookie sheet.
Brush the tops of the bourekas with the leftover beaten egg and sprinkle with 1 1/2 teaspoons of everything seasoning.
Bake in a 400°F oven for about 30 minutes.
