Preheat the oven to 420°F (approximately 215°C).
Prepare rice paper by soaking it in water until pliable.
In a skillet, heat olive oil over medium heat.
Add chopped onion and sauté until translucent.
Stir in minced garlic and cook for an additional minute until fragrant.
Add spinach and cook until wilted, about 3-4 minutes.
Remove from heat and let cool slightly.
In a bowl, combine the spinach mixture with crumbled feta and mozzarella cheese, adding black pepper and salt to taste.
Add chopped parsley and lemon juice to the mixture and combine well.
Take a sheet of soaked rice paper and place a spoonful of the filling at one end.
Fold the rice paper over the filling to form a triangle, then continue folding to the end, sealing the edges with a bit of water.
Place the bourekas on a baking sheet lined with parchment paper.
Brush the tops with olive oil.
Bake in the preheated oven for about 20 minutes until golden brown.
