Drain the water from the coconut and open it up.

Chop the coconut flesh and puree it.

In a big pot, add the pureed coconut and all other ingredients in no particular order.

Stir the mixture and cook on low heat for 11 minutes.

Prepare pie dough by mixing 4 cups all-purpose flour, 3/4 cup shortening, 3/4 cup cold butter, and 1 cup sugar. Add salt if using unsalted butter.

Chill the dough in the fridge for 15 minutes.

Roll out a piece of dough into a round circle.

Place some filling in the center of the circle, fold it over, and seal it with a fork.

Transfer the filled dough onto a lined baking sheet.
