1 lb smoked herring fillet, cut into pieces
2 tablespoons tomato paste
1/2 bell pepper, diced
1/2 onion, diced
2 cloves garlic, minced
1 tomato, diced, seeds removed
3 cups long-grain rice, washed
1 bunch fresh cilantro
1/2 teaspoon salt
1 teaspoon dried oregano
1/2 teaspoon black pepper
1/2 teaspoon smoked paprika
3 tablespoons olive oil
splash of white vinegar
1

Soak the smoked herring fillet in water for 8 hours to reduce excess salt.

2

Boil the herring in water for 5 minutes, then set aside the fish and reserve the cooking water.

3

In a deep skillet, heat 3 tablespoons of olive oil over medium heat.

4

Sauté the diced onion and minced garlic for 2 minutes until the onion is translucent.

5

Add the diced bell pepper and diced tomato, and cook for 5 minutes.

6

Stir in the spices: 1/2 teaspoon salt, 1 teaspoon oregano, 1/2 teaspoon black pepper, and 1/2 teaspoon smoked paprika.

7

Add the tomato paste and a splash of white vinegar, mixing well.

8

Add the cooked herring to the skillet and cook for an additional 2 minutes.

9

Pour in the reserved cooking water from the herring and bring to a boil.

10

Once boiling, add the washed rice and a sprig of cilantro, stirring to combine.
