Peel the garlic and mince it, placing it into a bowl.
Dice the onion and add it to the bowl with the garlic.
Dice the mushrooms and chop the parsley.
Add a few tablespoons of oil to a pot and heat it.
When the oil is hot, add the minced garlic and diced onion; sweat the onion.
Add salt and paprika powder to the pot.
If needed, add a bit of water to the mixture.
Add black pepper to taste.
Add all the diced mushrooms and cook until they release their juice.
Pour in the heavy cream and simmer for 20 minutes on medium heat.
Dissolve cornstarch in a few tablespoons of the stew and pour it back into the pot.
Bring the mixture to a boil, stirring constantly.
Add the chopped parsley and bring it to a boil again.
Cook for 2 more minutes before serving.
