4 pounds ground meat
2 cups crushed pork rinds
1 package thick cut bacon strips
1 cup diced onion
3 whole eggs
2 tbsp cajun seasoning
1 cup barbecue sauce
0.5 cup crushed crackers
1 tbsp coarse salt
1 tbsp fresh ground black pepper
5 crushed garlic cloves
0.5 tsp liquid smoke

Preheat the oven to 375°F (190°C).

In a blender, crush 2 cups of pork rinds.

In a large bowl, combine 4 pounds of ground meat, crushed pork rinds, and 0.5 cup of crushed crackers.

Beat 3 whole eggs and pour them into the bowl with the meat mixture.

Using hands, mix the ingredients together.

Add 1 cup of diced onion and 5 crushed garlic cloves to the mixture and mix again.

Add 1 tbsp of coarse salt and 1 tbsp of fresh ground black pepper to taste.

Mix in 1 cup of barbecue sauce and 2 tbsp of cajun seasoning, then mix again.

Add 0.5 tsp of liquid smoke to the mixture.

Remove the meat mixture and place it into a prepared pan lined with aluminum foil, shaping it into a loaf.

Cover the meatloaf with thick cut bacon strips, ensuring it is fully covered.

Cover the meatloaf with aluminum foil and bake in the oven at 375°F for about 90 minutes.

For the last 10 minutes of baking, uncover the meatloaf to allow the bacon to get crispy.
