Originating in the United States, meatloaf became a popular comfort food during the Great Depression, utilizing inexpensive ingredients to feed families. It symbolizes home cooking and is often associated with family gatherings and potlucks. Today, variations abound, with many regions adding their unique twists, making it a beloved dish across the globe.
Saute chopped onion in 2 to 3 tsp of oil for about 2 minutes.
Add minced garlic and chopped scotch bonnet pepper, season with 1/2 tsp salt and 1/2 tsp white pepper, and saute until fragrant.
Transfer the mixture to a plate to cool.
In a bowl, whisk together 1 egg and 1/2 cup milk (using buttermilk instead of half and half).
Mix in 1/2 cup panko bread crumbs and 2 tbsp green seasoning, then add 1 tbsp chopped parsley.
In a separate bowl, combine 1 lb 12 oz ground beef with 1 tsp onion powder, 1 tsp garlic powder, 1 tbsp all-purpose seasoning, and 1 tsp white pepper.
Add the cooled onion mixture to the ground beef, followed by the breadcrumb mixture, and mix well using hands.
Form the mixture into a meatloaf shape, approximately 3.5 inches thick and 8 inches long, and place it on a baking tray lined with grease paper.
Bake in the oven at 315°F for about 30 to 40 minutes until it has a nice color on top.
Prepare a sauce by mixing 4 cups of tomato ketchup, 2 tbsp mustard, and 1/2 cup brown sugar.
After 30 minutes, baste the meatloaf with the sauce and broil for 5 minutes to caramelize the topping.
Allow the meatloaf to cool for at least 20 minutes before slicing.
