Dice 1 onion finely, using half for the chili and half for topping the chili dogs.

After 30 minutes, stir the chili and check the consistency, then cover and cook for another 30 minutes.

After another 30 minutes, add chili powder, cayenne, paprika, brown sugar, garlic powder, onion powder, taco seasoning, a pinch of salt, 2-3 tbsp of yellow mustard, 1/2 cup of tomato sauce, and 1/2 cup of ketchup to the chili.

Mix all ingredients well and continue cooking until the desired consistency is reached, approximately 30-45 minutes more.

After cooking, add the Black Forest uncured wieners to the chili and ensure they are submerged.

Cook for an additional 20-25 minutes until the hot dogs are warmed through and the chili is at the desired consistency.

Once done, let the chili cool slightly before assembling the hot dogs.

Assemble the chili dogs by placing a hot dog in a poppy seed bun, adding yellow mustard, and topping with a scoop of chili and diced onions.
