Put 500 g of all-purpose flour in a bowl and add 2 and 1/2 teaspoons of salt; mix to distribute the salt.

Make a dip in the middle of the flour, add 15 g of fresh yeast, and spread it between your fingers.

Add 100 ml of lukewarm water and mix a little; cover with plastic foil and let sit for 20 minutes.

Cube 55 g of butter and let it sit at room temperature.

After 20 minutes, add the butter and 175 ml of lukewarm water to the mixture.

Knead the dough using a stand mixer with a dough attachment for 10 minutes until well combined.

Cover the dough with plastic wrap and let it rise in a warm place for 90 minutes.

After 90 minutes, weigh the dough (it should be about 844 g) and divide it into 14 pieces, each weighing 60 g.

Roll each piece into a rope about 30 cm (12 inches) long, creating a loop and braiding it together.

Cover the formed buns with a dish towel and let them rise for another 25 minutes.

Sprinkle some buns with poppy seeds and others with toasted sesame seeds before baking.

Preheat the oven and bake the buns for approximately 15 minutes until golden brown; check at 17 minutes for desired color.

Transfer the baked buns to a cooling rack.
