Warm 1.5 cups of milk in the microwave until lukewarm.
Add 0.5 teaspoons of sugar and 1.5 teaspoons of dry yeast to the milk; stir and let sit for 10 minutes to proof.
In a mixing bowl, combine 3.75 cups of all-purpose flour and 1.5 teaspoons of salt; mix well.
Add 3 tablespoons of softened butter to the flour mixture.
After 10 minutes, add the yeast mixture to the flour and butter; mix until combined.
Knead the dough for about 5 minutes until smooth and elastic.
Place the dough in a floured bowl, cover with a kitchen towel, and let rise in a warm place for 30 minutes.
After rising, divide the dough into 8 equal pieces.
Shape each piece into a long rope for braiding.
Braid three ropes together and pinch the ends to seal.
Place the braided rolls on a baking sheet lined with parchment paper; let rise again until doubled.
Brush half of the rolls with water and sprinkle with poppy seeds; leave the other half plain for caraway seeds and salt topping.
Bake the rolls until golden brown.
