Canned tuna is more affordable and still provides a protein element.
Boil beets until tender, about 45-60 minutes, then cool and peel.
Boil potatoes and carrots until tender, about 20-25 minutes, then cool and peel.
Dice the boiled beets, potatoes, and carrots into small cubes.
Chop pickles and onion finely.
In a large bowl, combine beets, potatoes, carrots, pickles, green peas, and onion.
Add diced herring to the mixture.
Drizzle with vegetable oil and vinegar, then season with salt and black pepper.
Gently mix all ingredients until well combined.
Chill in the refrigerator for at least 30 minutes before serving.
Garnish with fresh dill before serving.
