Add bacon to a 4 or 5-quart Dutch oven and render the fat for about 5 minutes.
Add diced onion, diced celery, and butter; sauté until softened, about 5 minutes.
Stir in flour and cook for about 4 minutes, stirring constantly.
Slowly whisk in chicken stock and bring to a boil for about 1 minute.
Reduce heat to simmer and cook for about 15 minutes, stirring occasionally.
Add milk and continue to simmer for about 15 minutes, ensuring it doesn't boil.
Turn off the heat and add grated cheddar cheese, Tabasco sauce, and Worcestershire sauce.
Check seasoning with salt and pepper, and stir in warm beer.
If the soup is too thick, add more milk as needed.
Optionally, use an immersion blender for a smoother texture or leave it chunky.
