Cut up carrots, red bell pepper, zucchini, onion, and half a pound of asparagus.
In a pan, add 1 pound of ground beef and cook it through, breaking it up as it cooks.
Prepare the stir fry sauce by mixing 3 tablespoons of low sodium soy sauce, minced garlic, minced ginger, 1 tablespoon of sesame oil, 1 teaspoon of rice vinegar, 2 tablespoons of water, and 1 tablespoon of cornstarch in a bowl.
Remove the cooked ground beef to a plate.
In the same pan, add 1 tablespoon of olive oil and the chopped veggies.
Add 1/3 cup of water to the pan with the veggies, cover, and cook on low heat for 5 to 9 minutes, stirring occasionally until tender.
Add the cooked ground beef back into the pan along with the stir fry sauce and stir until the sauce thickens and glazes the mixture.
Serve topped with sesame seeds.
For the sweet potato chicken dinner, add 1 tablespoon of olive oil to a pot and add 2 diced sweet potatoes and 1 diced yellow onion.
Add 1/2 cup of chicken broth, stir, and let cook for 8 to 10 minutes.
Stir in 1 tablespoon of minced garlic, 14 oz can of fire roasted diced tomatoes, 3 cups of chicken broth, 2 cups of fresh chopped spinach, and chopped rotisserie chicken.
Season with 1 teaspoon of salt, 1 teaspoon of pepper, paprika, onion powder, garlic powder, and Italian seasoning.
Add 1/2 cup of Parmesan cheese, stir, and cook for about 5 minutes until the cheese melts and spinach wilts down.
For the low carb turkey veggie skillet, add 1 tablespoon of olive oil to a pan and add 1 diced yellow onion and 1 pound of ground turkey.
Cook the ground turkey through with the onion, then add 1 tablespoon of minced garlic and season with 1/2 teaspoon of salt, 1/2 teaspoon of pepper, 1 teaspoon of Italian seasoning, 1/2 teaspoon of oregano, and 1/2 teaspoon of paprika.
Stir well, then add in 2 sliced zucchinis, 14 oz can of fire roasted diced tomatoes, 1 pound of trimmed green beans, and 1/2 cup of chicken broth.
Cook for 10 to 15 minutes until the veggies are tender, then add 1/2 to 1 cup of mozzarella cheese if desired.
For the zucchini boats, add 1 pound of ground turkey to a pan with a diced yellow onion, a dash of salt and pepper, and 1/2 teaspoon of Italian seasoning, and cook through.
Slice 4 zucchinis in half lengthwise and scoop out the insides.
Add 24 oz of pasta sauce to the cooked ground turkey and stir.
If desired, add in 1/2 cup of mozzarella cheese and let it melt down.
Spray a large baking dish with non-stick spray and fill the zucchini halves with the mixture.
