Preheat the oven to 350°F (175°C).
In a mixing bowl, take 1 stick of soft butter and mix it with sugar until combined.
Add 2 whole eggs to the butter and sugar mixture, breaking them in the bowl.
Add 1 cup and a half of canned pumpkin puree to the mixture.
Pour in 1/4 cup of olive oil and 1 teaspoon of vanilla extract.
Add 1 teaspoon of kosher salt, 1 teaspoon of baking soda, 1 teaspoon of baking powder, and 1 teaspoon of nutmeg to the mixture.
Add pumpkin pie spice to the mixture, being generous with it.
Add 2 cups of all-purpose flour to the mixture and whisk until just combined, being careful not to overmix.
Switch to a spatula and gently mix the batter, scraping the sides of the bowl.
Prepare a nonstick loaf pan, optionally lining the bottom with parchment paper for easy removal.
Pour the batter into the prepared loaf pan and gently press it down to flatten it.
Tap the pan to level the batter.
Bake in the preheated oven for 1 hour.
After baking, remove the loaf from the oven and let it cool slightly in the pan.
Use the parchment paper to help unmold the bread from the pan.
Peel off the parchment paper and sprinkle some pumpkin pie spice on top of the bread.
Sprinkle a touch of sugar on top for texture.
Slice the bread and enjoy.
