Preheat the oven to 350°F (180°C).
Butter and flour two loaf pans or spray them with cooking spray that has flour in it.
For the cream cheese filling, beat 8 oz of cream cheese until creamy and smooth.
Add 3/4 cup granulated sugar and 1 large egg to the cream cheese, and beat until smooth and thick.
In a large bowl, combine 3 1/2 cups all-purpose flour, 1 teaspoon baking powder, 1 teaspoon baking soda, 1/2 teaspoon kosher salt, 1 1/2 teaspoons ground cinnamon, 1/4 teaspoon ground ginger, and 1/8 teaspoon ground cloves using a wire whisk.
Add 1/2 cup chopped walnuts and 1/2 cup dark chocolate chips to the dry ingredients and mix well.
In another bowl, whisk together 4 large eggs, 1 teaspoon vanilla extract, 2 cups granulated sugar, 1 cup melted unsalted butter (cooled), and 1/2 cup water until well combined.
Add 1 can (15 oz) pumpkin puree to the wet ingredients and mix until combined.
Combine the wet and dry ingredients, stirring until just moistened.
Divide the batter between the two prepared loaf pans, placing half of the batter in each pan.
Spread the cream cheese filling evenly over the batter in each pan.
Top with the remaining pumpkin batter by placing dollops and smoothing it out.
Bake in the oven for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean.
Let the pumpkin bread cool in the pans for 10 to 15 minutes before transferring to a wire rack.
Run a knife or spatula around the edges of the pan to help release the bread before turning it out onto the rack.
