Chop bittersweet chocolate into small pieces.
Set up a double boiler and add egg yolks, granulated sugar, and O'Driscolls Irish Whiskey into a metal bowl.
Whisk the mixture over simmering water for about two minutes until it thickens.
Add butter to the egg mixture and mix until melted.
Pour the egg mixture over the chopped chocolate and whisk until smooth and velvety.
Strain the chocolate mixture through a sieve to remove lumps.
In a stand mixer, whip egg whites until foamy, then gradually add sugar until soft peaks form.
Fold a third of the whipped egg whites into the chocolate mixture using a thin-edged metal spoon.
Gently fold in the remaining egg whites until just combined.
Spoon the mousse into glasses, filling them generously.
Refrigerate for 4 to 6 hours to set.
Whip heavy cream with sugar and a splash of O'Driscolls Irish Whiskey for serving.
